Chicken Pie
This is a popular Nigerian snack. This easy homemade chicken pie is the ultimate cozy comfort food.
Ingredients
- 1.5kg chicken
 - 100g streaky bacon
 - 100g sliced button mushrooms
 - 1 chopped onions
 - 250ml chicken stock
 - Chopped parsley
 - 1 chopped boiled egg
 - 200g puff pastry (meat pie dough)
 - Salt and pepper
 
Directions
- Cut the chicken, remove the bone and cut into pieces
 - Season lightly with salt and pepper (I use habanero pepper)
 - Wrap each piece in very thin streaky bacon and place in a pie dish
 - Add the washed sliced mushrooms and remainder of ingredients, except the pastry
 - Add sufficient cold stock to barely cover the chicken
 - Cover with puff pastry (you can use the meat pie dough) and allow to rest in a refrigerator
 - Egg wash and bake at 200 degrees for 30 minutes (I bake till the top is brown)
 - Reduce the heat to 160-180 degrees and continue to cook for 1 hour (yes it can take a while)
