Jollof Rice
Jollof Rice is a flavorful West African dish made with rice, tomatoes, peppers, and spices, cooked to a rich and smoky perfection. It’s a beloved party favorite, often served with chicken, beef, or fish.
Ingredients
For the Rice:
4 – cups of long grain parboiled rice
1 – diced red onion
1 – diced green onion
1 – cup canola oil
1 – 136 g can of tomato paste
100 g – butter
1 tbsp – curry
1 tbsp – thyme
1 tbsp – rosemary
1 tbsp – ginger
1/2 tbsp – garlic
1 1/2 tbsp – paprika
1/2 tbsp – white pepper
4 – Bay leaves
Dashes of liquid smoke
Salt to taste
Blended Peppers:
1 – Large beetroot
2 – large bell red pepper
2- large sweet Italian red pepper
2 – jalapeño red peppers
4 – scotch bonnet peppers
1 – Red onion
1/2 – large full ginger piece
Add water as need to blend
Add A slash of olive oil when cooking down
For the chicken stock:
3lbs of hard or roaster chicken
1 tbsp – curry
1 tbsp – thyme
1 tbsp – rosemary
1 tbsp – ginger
1/2 tbsp – garlic
1 1/2 tbsp – paprika
1/2 tbsp – white pepper
4 – Bay leaves
1 – hot pepper
2 – red onions
2 – spoons chicken broth mix
1 – cup of water
Direction
Step one:
Chicken stock 🐓
- In a large skillet over medium heat
- Add all the ingredients at once with a cup of water and allow it to boil for 15mins
- Whilst ensuring the chicken is soft enough to your taste
- You will know it is ready when you start seeing oil from the chicken coming out.
- Allow it to cool and airfry the chicken while keeping the stock aside
Step two:
Peppers 🌶
- Add all the peppers to a blender with the ginger and onions adding water to help you with the blending.
- Transfer to a saucepan and. Cook till the water is dry add a tablespoon of oil to avoid it bubbling over
Step three:
For the rice 🍚
- Wash the long grain parboiled rice with warm water till it is the water is clear, keep it aside to drain.
- Put oil in a sauce pan and allow to heat for 5 min on a medium heat.
- Add onion and fry till it is transparent, add the spices stir till the flavor comes up. Add the tomato paste add fry for 10mins with consistent stirring.
- Then you add the cooked pepper blend and fry for 10mins.
- Transfer to a roaster pot , add the rice, stock and some 3 cups of water. Bake in the oven for 45mins at 350 degrees
- Add diced onion, 100g of butter and diced green pepper, mixed together with the rice cover for the heat to absorb and serve.
